To be honest, who did not love to lick the dough bowl as a child? Who did not wait eagerly for our mothers or grandmothers to set the hand stirrer aside and let us have the quirks to lick the dough with relish? Who would not have liked to snack on spoonfuls of dough? But soon Mama and Granny had a guilty conscience: "Not that you still get a stomachache!" After all, the cake dough usually contained raw eggs. That's why it was often with the small remnants of whiskers and dough scrapers and often I was sad - I often tasted the raw dough better than the finished cake ... For all of us who miss this feeling, there is now the solution: Cookie Dough !
Raw Cookie Duck? Nibbling expressly allowed!
Right, because the raw cookie dough is on everyone's lips and may be eaten from now on with relish and pure. In New York opened the first branches, where you can snack on a piece of raw biscuit in a variety of flavors. Cookie dough in waffle or cup instead of ice. And who does not know the famous ice cream with the Keksteig pieces in it ?! Now it is official: pure dough is finally socially acceptable and we are allowed to clean it just like that and without any guilty conscience and without stomachache! This is due to two reasons: Cookie Dough for nibbling is made without eggs. Since the dough no longer arises from the dough, you can simply omit the eggs. Secondly, the flour is made germ-free before mixing.
Flour causes abdominal pain?
Flour is a natural product and the wheat grows in open fields. This can lead to contamination by bird droppings and other environmental influences, which can be detected in flour not so nice E. coli bacteria. For cake baking this is usually less of a problem as the dough is baked long and hot enough. However, when snacking on dough we eat it raw and expose ourselves to a higher risk of abdominal pain. To prevent this, the flour is made germ-free. This can be done either in the microwave or in the oven. The desired amount of flour (wheat flour type 405) for the cookie dough is either heated in a microwave-suitable vessel 2 x 2 minutes at the highest level and loosened in between or heated in oven-proof dishes for 10-15 minutes at 120 ° C in a preheated oven. Then just let cool, sift through and ready. Now we can munch on dough without a guilty conscience.

With this topic, ie raw cookie dough and germ-free flour, I've been busy a few months ago and that's also the Reason why it was so quiet here in August and September: I have written a new book! The title is (Surprise!) Cookie Dough: Raw Cookie Duck for Snacking * And in this little book I have collected 30 recipes around the topic Cookie Dough.As a foretaste of the book I brought you a recipe from it, namely the absolute starter recipe for classic Chocolate Chip Cookie Dough , which also decorates the book cover. Still one of my absolute favorite recipes. Fun Fact to the book: I almost used the complete 2 kg bag Semi-Sweet Chocolate Chips * for this book project! Have fun copying!
Chocolate Chip Cookie dough
- 125 g of soft butter
- 50 g of the finest sugar
- 50 g of brown sugar
- 2 tablespoons of milk
- 175 g germ-free flour (see above)
- 2 pinches of sea salt flakes
- 75 g Bittersweet chocolate droplets
The soft butter with the two sugars a few minutes long with the hand mixer or in the food processor with a thick cream. Then stir in the milk thoroughly.
Add flour and salt and mix in just until everything has just mingled and no more flour is visible.
Finally, fold the chocolate droplets by hand.
Form into balls with an ice cream scoop and serve as ice cubes.
